Egg Rolls

  • 1 pound ground beef
  • 1 tablespoon hamburger seasoning
  • 1/2 small yellow onion, finely chopped (about 1/4 cup)
  • 4 large dill pickles, finely diced (about 1 cup)
  • 1 1/2 cups sharp cheddar cheese, shredded (169.5 g)
  • 10 egg roll wrappers
  • 1 recipe onion bacon jam, prepared

Dipping Sauce

  • 1/4 cup mayonnaise (58 g)
  • 2 teaspoons mustard
  • 2 teaspoons ketchup

Instructions

  1. Cook the beef mixture: In a medium skillet over medium heat, add the ground beef and hamburger seasoning. Cook, stirring occasionally, until there is no pink remaining, about 10 minutes. Remove from heat and drain any excess oil.
  2. Prepare egg roll wrappers: Lay out 10 egg roll wrappers on a clean, dry surface, working with one at a time.
  3. Add filling: Place near the center of each wrapper: 1 tablespoon bacon jam, ¼ cup of the cooked hamburger mixture, 1 teaspoon finely diced onion, 1 ½ tablespoons diced pickles, and 2 tablespoons shredded cheddar cheese.
  4. Roll egg rolls: Lightly wet the edges of the wrapper with water. Fold up the bottom corner over the filling and roll once. Fold in the right and left corners towards the center, pressing to seal. Continue rolling until the filling is fully enclosed. Press edges firmly to seal completely.
  5. Preheat air fryer: Set the air fryer to 400°F and allow it to preheat.
  6. Air fry egg rolls: Place the egg rolls in the air fryer basket in a single layer (may need to do batches). Spray the tops with nonstick cooking spray. Air fry for 4 minutes, then flip and spray again. Cook an additional 4 minutes or until golden brown and crispy.
  7. Prepare dipping sauce: While the egg rolls cook, whisk together mayonnaise, mustard, and ketchup in a small bowl until smooth.
  8. Serve: Serve the hot egg rolls immediately with the prepared dipping sauce.

Notes

  • To fry in oil: Heat 2–3 inches of vegetable oil to 350°F in a deep pot. Fry 2–3 egg rolls at a time until golden brown, about 2–3 minutes per side. Drain on paper towels before serving.
  • To bake: Preheat oven to 375°F. Place egg rolls on a parchment-lined baking sheet, lightly spray or brush with oil. Bake 15–20 minutes, flipping halfway, until golden and crispy.
  • Make sure to seal egg rolls tightly to prevent filling from leaking during cooking.
  • Use sharp cheddar for best flavor, but you can substitute with other firm cheeses if desired.
