Instructions

  1. Make the cookie dough: Combine softened butter and granulated sugar in a large bowl. Use an electric mixer to beat until the mixture is light, creamy, and well combined. Add egg, egg white, and vanilla extract, and mix until fully incorporated.
  2. Prepare dry ingredients: In a separate bowl, whisk together cake flour, cornstarch, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined. Form the dough into a 1-inch thick disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
