Instructions

  1. Prepare Caramel Mixture: Set up a double boiler over medium-low heat and melt the caramels, sweetened condensed milk, and butter, stirring frequently until a smooth caramel mixture forms. Alternatively, melt ingredients in a heat-proof bowl in the microwave on a low setting, stirring regularly to avoid scorching.
  2. Prepare Workspace: Line a large rimmed baking pan with wax paper. Place about 2 cups of rice cereal in a medium, low, wide bowl and set aside for coating.
  3. Dip Marshmallows in Caramel: Drop one marshmallow into the warm caramel. Use a fork in each hand to quickly turn and completely cover the marshmallow with caramel. Lift it out and gently tap the fork handle on the bowl’s side to let excess caramel drip back in.
  4. Coat with Rice Cereal: Slide the caramel-coated marshmallow from the fork onto a third fork dedicated to rolling, then roll it thoroughly in the rice cereal bowl until fully coated. Transfer the puff to the prepared baking pan.
  5. Repeat Process: Continue dipping and coating remaining marshmallows, adding more rice cereal as needed. For efficiency, dip 3-4 marshmallows in caramel at a time, working swiftly to coat each with caramel and rice cereal.
  6. Set and Store: Allow caramel to set. Store the puffs in an airtight container, separating layers with wax paper. Refrigerate if consuming within 1-2 days or freeze for longer storage. These puffs can also be enjoyed chilled or slightly thawed.
