Instructions

  1. Preheat Oven: Preheat your oven to 350°F and grease a loaf pan with cooking spray. Set aside.
  2. Mix Batter: In a large mixing bowl, combine the canola oil, softened butter, and white sugar until well blended. Add eggs and vanilla extract, mixing until smooth.
  3. Add Dry Ingredients and Buttermilk: Gently add the all-purpose flour, baking powder, salt, and ½ cup buttermilk to the wet mixture. Stir until a smooth batter forms.
  4. Prepare Cinnamon Batter: Scoop out ½ cup of the batter into a separate smaller bowl. Mix in ground cinnamon and molasses until evenly combined.
  5. Layer Batter: Pour half of the plain batter into the bottom of the loaf pan. Spoon half of the cinnamon batter in dollops over the plain batter, then pour the remaining plain batter on top. Lastly, dollop the remaining cinnamon batter over the surface.
  6. Swirl Batters: Using a butter knife, swirl the cinnamon batter through the plain batter gently to create a marbled effect.
  7. Bake: Place the loaf in the oven and bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare Topping: While the bread bakes, pour the melted butter into a shallow dish. In another shallow dish, combine white sugar, light brown sugar, and ground cinnamon.

Notes

  • If you don’t have buttermilk, substitute by adding 1 tablespoon of lemon juice to a measuring cup then fill to the 1 cup line with milk. Stir and let sit for 5 minutes before using.

  • For a richer flavor, use melted butter instead of canola oil in the batter.
