Fritters
- 1 1/2 cups all purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup soy milk
- 2 large apples (granny smith, honey crisp or other crisp variety), diced
- Vegetable oil, for frying
Simple glaze
- 3 cups powdered sugar
- 1/3 cup soy milk
- 1/2 teaspoon pure vanilla extract
Instructions
- Mix dry ingredients: In a large bowl, add the flour, sugar, baking powder, salt and cinnamon and stir to combine thoroughly.
- Add wet ingredients and apples: Now add the applesauce and soy milk to the bowl with the dry ingredients and mix until just combined. Do not over mix. Fold in the diced apples gently to incorporate.
- Heat oil: Heat 2 inches of vegetable oil in a large, heavy skillet or pot to about 375 degrees Fahrenheit, using a thermometer to ensure correct temperature.
- Fry fritters: Scoop 1/3 cup of the apple fritter batter and place it carefully in the hot oil, spreading it down to flatten noticeably. Cook on one side for about 3 minutes until golden brown, then flip with tongs and cook another 2 minutes until browned and cooked through.
- Drain fritters: Place the cooked fritters on a cooling rack with a pan or parchment paper underneath to catch any oil drippings and glaze later.
- Repeat frying: Continue frying the rest of the batter in batches until all fritters are cooked, then turn off the heat.
- Make glaze: In a small to medium bowl, whisk together the powdered sugar, soy milk, and vanilla extract until smooth and fully combined.
- Glaze fritters: Dunk each warm fritter into the glaze, then place back on the rack to allow the glaze to harden and drip. Wait a few minutes for the glaze to set before serving.
Notes
- Use a high smoke point oil such as peanut, vegetable, or canola oil for frying to prevent burning.
- For gluten free option, a quality gluten free flour mix may work, but this has not been tested.
- Baking is possible but will result in softer fritters without the crispy exterior. To bake, spray with oil and bake at 350°F for about 30 minutes.
- Apple fritters taste best when eaten within a few hours of frying as they soften over time.
