Egg Roll Base

  • 4 egg roll wrappers
  • Oil for frying or baking the egg roll wrappers (about 1 cup if frying)


Instructions

  1. Prepare the egg roll wrappers: Heat oil in a medium skillet over medium-high heat until it reaches 350℉. Place each egg roll wrapper in the hot oil and fry each side for 30 to 60 seconds or until golden and crispy. Alternatively, lightly spray or brush each side of the wrappers with oil and bake or air fry until crispy.
  2. Mix the salad: Place the Asian Salad mix with its included ingredients into a large bowl or bag and toss to combine evenly.
  3. Coat the chicken: Toss the cooked chicken tenders in the sweet chili sauce. Use about 2 tablespoons of sauce per 2 tenders or per serving. You may also drizzle the sauce over the chicken instead of tossing if preferred.
  4. Assemble the salad: Place the crispy egg roll wrappers on plates, top with the tossed Asian salad, and then arrange the sweet chili-coated chicken tenders on top. Serve immediately for best crunch and freshness.
