  • 2/3 cup pureed tomatoes (store-bought or homemade)
  • 1/2 red bell pepper (washed, deseeded, and sliced into thin strips)
  • Green olives (sliced very thinly)
  • 1 ball fresh mozzarella (diced; add more if desired)
  • Extra virgin olive oil (for drizzling)
  • Dried oregano (to taste)
  • Salt (to taste)


Instructions

  1. Preheat the oven: Preheat your oven to 390ºF (200ºC) with the fan setting on to ensure even cooking.
  2. Slice the baguette: Slice the baguette lengthwise in half and place both halves cut side up on a baking sheet lined with parchment paper.
  3. Spread the tomato puree: Spread the pureed tomatoes evenly over each half of the baguette. Season with a pinch of salt and drizzle a little extra virgin olive oil on top.
  4. Prepare the toppings: Wash, deseed, and slice the red bell pepper into thin strips. Slice the green olives very thinly. Dice the fresh mozzarella.
  5. Add the toppings: Arrange the sliced olives first over the tomato spread, followed by the red bell pepper strips, and then sprinkle the diced mozzarella evenly on top.
  6. Season and drizzle: Sprinkle dried oregano over the assembled toppings and drizzle with extra virgin olive oil to enhance flavor and texture.
  7. Bake: Place the baking sheet in the preheated oven and bake for about 15 minutes, or until the baguette is golden and crispy and the mozzarella is melted and bubbly.
