Instructions

  1. Prepare Strawberries: Wash, de-stem and slice the fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later use.
  2. Make Strawberry Purée: Place the remaining strawberries in a blender or food processor and blend until fully puréed.
  3. Combine Ingredients in Saucepan: Pour the strawberry purée along with cornstarch, lemon juice, and sugar into a saucepan. Mix well to combine.
  4. Cook the Glaze: Heat the mixture over medium-high heat until it reaches a gentle boil. Reduce to low-medium heat and cook, stirring occasionally, until the glaze thickens. Test by dipping a spoon into the glaze; if the back remains coated, it is ready.
  5. Add Vanilla Extract: Remove the saucepan from heat and stir in the vanilla extract until well combined.
  6. Strain and Combine with Fresh Berries: Pour the hot glaze through a mesh strainer into the bowl with the reserved fresh berries. Stir the fresh berries with the warm glaze until fully coated.
  7. Cool and Serve: Let the glazed berries cool to room temperature or chill before using as a topping.
