Description
Festive and colorful Easter Rice Krispie Treats combining classic marshmallow cereal bars with a mix of Rice Krispies, Rice Chex, Frosted Cheerios, Easter M&Ms, and sprinkles for a fun holiday twist.
Ingredients
Scale
Base Ingredients
- ½ cup salted butter
- 10 cups mini marshmallows, divided
- 1 teaspoon vanilla extract
Cereal Mix
- 5 cups Rice Krispies
- 2 cups Rice Chex
- 2 cups Frosted Cheerios
Toppings
- 1 cup Easter M&Ms
- 2 teaspoons Easter sprinkles
Instructions
- Prepare the Pan: Premeasure all ingredients before you begin cooking and line a 9×13-inch baking sheet with parchment paper, then coat it with non-stick spray; set aside.
- Melt Butter and Marshmallows: In a large saucepan, melt the ½ cup salted butter together with 8 cups of mini marshmallows over low heat, stirring constantly until smooth and fully melted.
- Add Vanilla and Remaining Marshmallows: Remove the saucepan from heat, then stir in 1 teaspoon vanilla extract. Next, fold in the remaining 2 cups mini marshmallows until evenly blended.
- Mix Cereals: Add 5 cups Rice Krispies, 2 cups Rice Chex, and 2 cups Frosted Cheerios to the melted mixture. Stir until all the cereals are fully coated with the marshmallow mixture.
- Add M&Ms and Sprinkles: Gently and quickly fold in 1 cup Easter M&Ms and 2 teaspoons Easter sprinkles to avoid color bleeding and maintain candy shape.
- Transfer and Press: Transfer the mixture into the prepared baking dish. Optionally, top with extra M&Ms and sprinkles, then use parchment paper or greased hands to gently press the mixture firmly but not too hard into the pan to avoid a tough texture.
- Set and Cut: Allow the treats to set at room temperature for 30 minutes before removing from the pan and cutting into 20 squares.
Notes
- Unsalted butter may be used if you add about ½ teaspoon salt to balance flavor.
- Corn Chex can substitute Rice Chex, but avoid wheat varieties for best texture.
- Other varieties of Cheerios can be used based on preference.
- Do not add M&Ms too early or the colors will bleed into the mixture.
- Press the mixture gently to keep treats soft and chewy rather than hard and tough.
- Store treats in an airtight container at room temperature for up to 2 weeks.
