- 2 pears (peeled, cored and sliced thinly)
Glaze:
- 2 teaspoons brown sugar
- 2 teaspoons coconut oil
- 2 teaspoons lemon juice
Instructions
- Preheat and Prepare Crust: Preheat the oven to 375 degrees F. Lightly grease a 9-inch pie plate and set aside. Roll out or press pie dough evenly into the plate, crimp the edges with your fingers.
- Mix Filling: In a large bowl, combine sliced apples, ½ cup brown sugar, 3 tablespoons cornstarch, cinnamon, salt, and 2 tablespoons lemon juice. Toss well to coat the fruit evenly. If liquid pools at the bottom, stir in an additional tablespoon of cornstarch to thicken.
- Assemble Pie: Spoon the filling mixture into the prepared crust and smooth the top evenly.
- Prepare Glaze: In a small saucepan over low heat, melt together 2 teaspoons brown sugar, 2 teaspoons coconut oil, and 2 teaspoons lemon juice until combined and smooth. Remove from heat and set aside.
- Add Pear Topping: Arrange the sliced pears in a decorative circular pattern on top of the filling.
- Glaze and Bake: Brush the pear topping liberally with the prepared glaze. Cover the pie loosely with foil and bake in the preheated oven for 40 minutes or until the crust is browned and pears are soft and golden.
