Instructions
- Prepare the dough: If time allows, place the pizza dough in a lightly greased bowl and allow it to come to room temperature. Using a bench scraper or a sharp knife, cut the dough ball into 12 even slices, avoiding overworking the dough to preserve air bubbles.
- Oil the muffin pan: Pour 1 teaspoon of olive oil into each muffin cup of a standard muffin pan.
- Shape the dough: Gently shape each piece of dough into a rough ball and place it into the oiled muffin pan, taking care not to deflate the air bubbles. Cover the pan with a towel and let it rest near the oven while preheating it to 400 degrees Fahrenheit to aid dough rising.
- Prepare garlic and rosemary: While the dough rests, chop the garlic cloves and remove the leaves from the rosemary sprigs, then chop the leaves finely. Set aside.
- Infuse olive oil: Heat the remaining olive oil over medium heat. Flick a small drop of water into the oil to test readiness; when it sizzles, remove from heat. Carefully add the chopped garlic and rosemary to the hot oil and stir until sizzling stops.
- Add flavored oil to dough: Spoon a generous amount of the garlic and rosemary olive oil mixture onto each dough ball, using all of the infused oil.
- Create dimples: Use two fingers to press into each dough ball to create dimples, helping the garlic and rosemary adhere better.
