Ingredients
Scale
Chicken and Marinade
- 1 lb. boneless, skinless chicken breasts or thighs, cut into bite size pieces
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 4 large garlic cloves, minced
- 3 tablespoons Greek seasoning
- 1 large lemon, juiced
- ½ teaspoon salt
- ½ teaspoon freshly cracked black pepper
Instructions
- Prepare Marinade: In a ziplock bag or tightly covered bowl, combine olive oil, white wine vinegar, minced garlic, Greek seasoning, fresh lemon juice, salt, and freshly cracked black pepper. Shake or whisk well to mix all ingredients thoroughly.
- Marinate Chicken: Add the bite-sized chicken pieces into the marinade and shake the bag to evenly coat the chicken. Refrigerate and let marinate overnight or for at least 6 hours to enhance flavor and tenderness.
- Preheat Cooking Surface: If using an outdoor grill or stovetop grill pan, preheat to medium-high heat. If using an air fryer or oven, preheat air fryer to 370°F or oven to 400°F accordingly.
- Thread Chicken onto Skewers: Remove chicken pieces from the marinade (discard leftover marinade) and thread them onto skewers, ensuring pieces are evenly spaced for even cooking.
- Cook Chicken: Grill the skewers on the outdoor grill or grill pan until fully cooked, about 15 minutes, turning occasionally. For air fryer, cook at 370°F for 20 minutes flipping halfway through. For oven, bake in a dish at 400°F for 20 minutes flipping halfway. Cook until internal temperature reaches 165°F.
- Rest Chicken: Remove chicken from heat and wrap in foil. Let rest for 5 minutes to allow juices to redistribute, ensuring moist and tender chicken.
- Serve: Serve chicken souvlaki with your favorite sides such as pita bread, tzatziki sauce, or a fresh Greek salad.
Notes
- Storage: Store cooked chicken souvlaki in an airtight container in the refrigerator for up to 5 days. For easier storage, remove chicken from skewers and keep toppings or tzatziki sauce separate.
- Freezing: Marinate raw chicken and freeze in a freezer-safe ziplock bag with marinade for convenient meal prep. Thaw in the refrigerator overnight before cooking as directed.
- Alternate Cooking Methods: If an outdoor grill or stovetop grill pan is unavailable, cooking in the air fryer or oven provides excellent results.
- Skewer Safety: If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.
- Temperature Check: Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for food safety.
