Ground Turkey Mixture

  • 1 Tbsp sesame oil

  • 2 Tbsp sriracha
  • 3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • 1 Tbsp sriracha
  • 1 tsp rice vinegar
  • 2 tsp honey

Instructions

  1. Prep Bang Bang Sauce: Add all of the bang bang sauce ingredients to a small bowl. Whisk well to combine. Adjust the flavor by adding more sriracha for extra spice or more honey or sweet chili sauce for sweetness. Chill until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey and break it into smaller pieces. Cook until browned and the internal temperature reaches 165°F.
  3. Season Mixture: Reduce heat to medium-low. Add garlic, ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and salt. Stir well and simmer for 2-3 minutes, stirring occasionally.
  4. Thicken Mixture: Sprinkle corn starch over the turkey mixture and stir thoroughly to combine and thicken. Optionally, stir in 2 tablespoons of bang bang sauce into the meat mixture before serving.
  5. Assemble Rice Bowls: Layer cooked rice and your choice of shredded carrots, cucumbers, edamame, pickled onions, avocado, shredded cabbage, and other veggies into bowls. Spoon the turkey mixture over the rice and drizzle generously with bang bang sauce. Garnish with sliced green onions and sesame seeds.

  • Store leftover turkey mixture and bang bang sauce separately in airtight containers in the refrigerator. Turkey mixture will keep for 3-4 days; sauce stays fresh for up to one week.
