Description

These Halloween Rice Krispie Treats are a fun and festive twist on the classic marshmallow cereal snack. Browned butter adds a rich, nutty flavor, while small marshmallows create gooey pockets inside. The treats are finished with a chocolate drizzle and colorful Halloween-themed sprinkles, perfect for parties or spooky celebrations.

Ingredients

Scale

Main Ingredients

  • 1 stick (1/2 cup) unsalted butter
  • 1 bag (10 ounces) jumbo marshmallows
  • 8 cups Rice Krispies cereal
  • 1 cup small marshmallows

Decorations

  • 12 paper straws
  • 1/2 cup semisweet chocolate chips, melted (for drizzling)
  • Halloween-themed sprinkles

Instructions

  1. Prepare a Workspace: Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal of the treats later.
  2. Brown the Butter: In a large saucepan over medium-low heat, melt the butter. Continue cooking, stirring frequently, until the butter turns golden brown and gives off a nutty aroma. Be careful not to burn it, then remove from heat.
  3. Melt the Jumbo Marshmallows: Add the jumbo marshmallows to the browned butter in the saucepan. Return to low heat and stir until the marshmallows are fully melted and smooth.
  4. Combine with Rice Krispies: Remove the saucepan from the heat and quickly stir in the 8 cups of Rice Krispies cereal until well coated with the marshmallow mixture.
  5. Add Small Marshmallows: Gently fold in the 1 cup of small marshmallows to add gooey pockets inside the treats.
  6. Press into Baking Dish: Transfer the mixture into the prepared baking dish. Using a greased spatula or buttered hands, press the mixture evenly and firmly into the pan without compacting it too much.
  7. Set and Cut: Let the mixture cool and set for about 50 minutes to 1 hour until firm enough to cut easily.
  8. Insert Straws: Cut the set treats into 24 squares. Insert a paper straw into the bottom of each square to serve as a fun handle.
  9. Chocolate Drizzle: Melt the semisweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between intervals until smooth. Drizzle the chocolate over each treat.
  10. Add Sprinkles: While the chocolate is still wet, sprinkle Halloween-themed sprinkles over the treats for a festive look.
  11. Final Set and Enjoy: Allow the chocolate drizzle to set for 15-20 minutes before serving and enjoying these spooky treats.

Notes

  • To prevent the marshmallow mixture from sticking to your hands while pressing it into the pan, lightly butter your hands or use a greased spatula.
  • Use parchment paper with overhang for easy removal of the entire slab from the baking dish.
  • If you don’t have jumbo marshmallows, regular large marshmallows can be used, but cooking time may vary slightly.
  • For a gluten free version, ensure the Rice Krispies cereal is certified gluten free.
  • You can substitute paper straws with lollipop sticks or omit handles entirely.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
