  • 4 large eggs
  • 2 tsp lime zest
  • ⅔ cup (159 ml) fresh lime juice
  • drop of green (+ yellow) food coloring, optional


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Lightly grease or line an 11×7-inch baking dish with parchment paper, allowing it to overhang by 2 inches on both sides for easy removal.
  2. Make the Crust: In a food processor, combine all-purpose flour, powdered sugar, salt, and butter pieces. Pulse until the mixture resembles fine crumbs. Press this mixture evenly into the prepared baking dish.
  3. Bake Crust: Bake the crust in the preheated oven for 20 minutes or until it turns golden brown. Remove from oven and set aside.
  4. Prepare Filling: In a bowl, whisk together granulated sugar and flour. Add the eggs one at a time, whisking well after each addition. Stir in lime zest, fresh lime juice, and if desired, a drop of green and yellow food coloring until smooth and fully combined.
  5. Assemble and Bake: Pour the lime filling over the hot crust. Return the pan to the oven and bake for an additional 20 minutes or until the filling is set and no longer jiggles when shaken.
  6. Cool and Chill: Remove from oven and let the bars cool completely in the pan for about 1 hour. Then refrigerate for 2 hours to fully set the filling.
  7. Serve: Lift the bars out of the pan using the parchment paper overhang, cut into squares, and serve chilled. Store any leftovers in the refrigerator.
