Ingredients

Units Scale

Meat and Seasonings

  • 6-8 slices bacon, chopped
  • 1 lb ground beef
  • 1 small onion, diced
  • 3-4 garlic cloves, minced
  • 1 tbsp Kinders caramelized onion burger seasoning or any favorite burger seasoning
  • 2 tsps Worcestershire sauce

Sauces and Condiments

  • 1 tbsp tomato paste
  • 1 tbsp dill pickle relish
  • 1 tsp yellow or Dijon mustard
  • 8 oz can of tomato sauce

Grains and Liquids

  • 1 cup uncooked long grain white rice (Jasmine rice recommended)
  • 2 1/4 cups beef broth

Cheese

  • 2 cups shredded sharp cheddar cheese or any preferred cheese

Instructions

  1. Cook Bacon: In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving about 1 teaspoon of bacon grease in the pot.
  2. Cook Beef and Aromatics: Add the ground beef, diced onion, and minced garlic to the pot. Cook until the beef is browned and onions are softened. Drain any excess grease from the pot.
  3. Season: Stir in the caramelized onion burger seasoning and Worcestershire sauce. Cook for 1 to 2 minutes to blend the flavors.
  4. Add Tomato Paste: Mix in the tomato paste and cook for another 1 to 2 minutes to deepen the flavor.
  5. Add Condiments and Tomato Sauce: Stir in the dill pickle relish, mustard, and the tomato sauce until well combined.
  6. Add Rice and Broth: Pour in the uncooked rice and beef broth. Stir to combine all ingredients then bring to a boil.
  7. Simmer: Reduce heat to low and cover the pot. Let simmer for 20 minutes or until the rice is tender and has absorbed most of the liquid.
  8. Add Cheese and Bacon: Remove the pot from heat. Stir in 1 cup of shredded cheddar cheese and the reserved crispy bacon. Sprinkle the remaining cheese on top of the dish.
  9. Melt Cheese: Cover the pot again and let it sit for 3 to 5 minutes so the cheese melts and becomes gooey.
  10. Serve: Serve the bacon cheeseburger rice hot and enjoy your comforting one-pot meal.

Notes

  • To add a little spice, include diced jalapeños or a splash of hot sauce while cooking.
  • Substitute ground beef with ground turkey or chicken for a lighter protein option.
  • Enhance the dish by adding sautéed mushrooms or bell peppers with the onions.
  • Leftovers keep well in an airtight container in the refrigerator for up to 4 days.
  • Freeze leftovers in portions for up to 2 months; reheat with a splash of broth or water to maintain moisture.
  • This recipe is excellent for make-ahead lunches or freezer-friendly dinners.
