Instructions

Arrange them cut-side down in a single layer on the pan.
  3. Roast the potatoes: Roast the potatoes until the bottoms start to turn golden-brown, about 30 minutes. While roasting, finely grate the Parmesan cheese and chop the fresh parsley leaves to prepare for topping.
  4. Flip and add cheese: Carefully flip each potato so the cut-side is up using tongs or a thin metal spatula. Sprinkle the grated Parmesan cheese evenly over the potatoes. It’s fine if some cheese falls onto the pan.
