  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons honey plus more if needed
  • 1 1/2 cups finely ground vanilla wafer crumbs or shortbread crumbs
  • 1 1/2 cups finely ground walnuts or ground pecans
  • 3-4 tablespoons bourbon whiskey such as Wild Turkey or Jim Beam


Instructions

  1. Set aside nuts: Pour 1/2 cup of the ground walnuts in a small bowl and set aside for rolling the bourbon balls later.
  2. Melt chocolate and honey: In a 1 1/2 quart microwave-safe bowl, combine chocolate chips and honey. Microwave at full power for 1-2 minutes, stirring every 30 seconds, until the mixture is smooth and lump-free.
  3. Mix ingredients: Stir in the ground vanilla wafers, ground walnuts, and bourbon whiskey. The mixture will be quite thick but scoopable.
  4. Form balls: Scoop out the mixture using level tablespoons and roll each portion into a ball shape by hand.
  5. Coat balls: Roll each ball in the reserved 1/2 cup of ground walnuts to coat them evenly.
  6. Store: Place the bourbon balls in a tightly covered container. Allow them to develop flavor over four days. Properly stored, they will keep up to four weeks.

Notes

  • If you don’t have a microwave, melt the chocolate and honey over medium-low heat in a saucepan; this method takes longer but works well.
  • If the mixture is too dry, add a splash more bourbon to reach the right consistency.
  • If the mixture is too crumbly to form balls, add an additional tablespoon of honey to help bind it.
  • Flavor improves after resting for several days but can be enjoyed immediately if desired.
