Spicy Mayo
- 1/4 cup mayonnaise

- 12 count package Hawaiian rolls
- 1 pound deli sliced turkey
- 8 ounces shredded pepper jack cheese
- 1 (7 ounce) can diced green chiles, drained
Butter Sauce
- 1/2 cup melted butter
- 1 tablespoon poppy seeds
- 1 tablespoon dijon mustard
- 1 tablespoon onion powder
- 1 teaspoon Worcestershire sauce
Instructions
- Preheat the oven: Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9×13 or 8×11-inch baking pan.
- Make spicy mayo: In a small bowl, stir together mayonnaise, paprika, yellow curry powder, cayenne pepper, and salt until well combined. Set aside.
- Prepare rolls: Remove Hawaiian rolls from the package and keep them together as a slab. Slice them in half lengthwise to create a top and bottom slab, then place the bottom slab into the prepared baking pan.
- Assemble sliders: Spread the spicy mayo mixture evenly over the bottom slab. Layer half of the shredded pepper jack cheese over the mayo, then top with all the sliced turkey. Spoon the drained diced green chiles evenly over the turkey, and sprinkle the remaining cheese on top. Place the top slab of rolls over the fillings to complete the sandwich.
- Prepare butter sauce: In a small bowl, whisk together melted butter, poppy seeds, dijon mustard, onion powder, and Worcestershire sauce until fully blended.
- Finish and bake: Drizzle or brush the butter sauce evenly over the top slab of rolls to cover thoroughly. Loosely cover the pan with aluminum foil and bake at 350°F for 10 minutes or until the cheese is completely melted and sliders are heated through. Serve hot.
Notes
- Use Hawaiian rolls for their soft texture and slight sweetness that complements the spicy and savory flavors.
- If you prefer less heat, reduce or omit the cayenne pepper from the spicy mayo.
- For a crispier top, remove the foil during the last 2 minutes of baking.
- These sliders can be prepared a few hours ahead and baked just before serving to save time.
- Substitute turkey with chicken or ham if desired.
