Description

These Taco Bites are the perfect party appetizer, combining seasoned taco meat, sour cream, shredded lettuce, cheddar cheese, and cherry tomatoes on crispy scoop chips for a delicious and easy-to-serve snack.

Ingredients

Scale

Taco Bites Filling

  • 1 lbs. taco meat
  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes, halved
  • 50 scoop chips

Instructions

  1. Prepare the Taco Meat: Use your preferred crunch wrap taco meat recipe to prepare 1 pound of seasoned taco meat thoroughly, cooking it until fully browned and flavorful.
  2. Prepare the Fillings: Shred the iceberg lettuce and cheddar cheese. Slice each cherry tomato in half for topping later.
  3. Prepare Sour Cream Piping Bag: Place the sour cream in a sandwich bag and cut a small corner off to create a simple piping bag for easy application onto each scoop chip.
  4. Assemble the Taco Bites: Arrange the scoop chips on a large serving platter. Spoon approximately ½ teaspoon of taco meat onto each chip.
  5. Add Sour Cream and Lettuce: Pipe a small amount of sour cream over the meat on each chip, then add a small pile of shredded lettuce atop the sour cream.
  6. Finish with Cheese and Tomato: Sprinkle a little shredded cheddar cheese on each bite and top with half a cherry tomato to complete the presentation.

Notes

  • Use sturdy scoop chips to prevent breaking when assembled.
  • The sour cream piping bag method helps control portion and presentation for a neat look.
  • You can prepare the taco meat a day ahead to save time on party day.
  • For a fresher taste, use iceberg lettuce right before serving to keep it crisp.
  • Substitute cheddar with your favorite cheese like Monterey Jack or a Mexican blend for variety.
