Instructions

  1. Toast the Nuts: Preheat the oven to 350°F (175°C). Spread the almonds and pistachios or mixed nuts on a baking sheet and toast them for 10 minutes until fragrant and lightly browned. Remove and let cool.
  2. Cook the Honey: In a saucepan, heat the honey over medium heat. Using a candy thermometer, cook it until it reaches 250°F (120°C), stirring occasionally to prevent burning.
  3. Prepare the Sugar Syrup: In a separate saucepan, combine the sugar and water. Heat over medium heat and bring to a boil. Continue cooking until the sugar syrup reaches 300°F (150°C) on a candy thermometer.
  4. Whip Egg Whites: While the syrups are heating, beat the egg whites in a clean bowl until they form soft peaks. Slowly pour the hot honey into the egg whites while continuing to beat, creating a glossy and thick mixture.
  5. Mix: Gradually add the hot sugar syrup into the egg white and honey mixture, folding gently. Then fold in the toasted nuts and the vanilla extract or citrus zest evenly.
  6. Shape: Line a dish or pan with parchment paper and pour the nougat mixture into it. Press it down evenly with a spatula or your hands to compact the mixture.
  7. Set: Allow the torrone to set at room temperature for 4 hours until firm and chewy.
  8. Slice: Once set, remove from the dish and slice into 12 pieces. Serve immediately or store in an airtight container to maintain freshness.
