- 1 cup raw cashews, soaked or boiled if not using a high-speed blender
- 1 small handful cilantro (about ½ cup packed)
- ¾ cup water
- 2 cloves garlic
- 1 lime, zested and juiced

- ¼ teaspoon black pepper
Noodles
- 2 packages Tofu Shirataki Spaghetti Shaped Noodles (or substitute thin rice noodles)
Instructions
- Prepare the sauce: Add the soaked or boiled cashews, cilantro, water, garlic, lime zest, lime juice, salt, and black pepper to a blender. Blend until the mixture is smooth and creamy, ensuring all ingredients are fully combined.
- Cook the noodles: Prepare the tofu shirataki noodles according to package instructions by rinsing and draining them thoroughly. Return the noodles to the pot after draining.
- Combine and heat: Pour the creamy cilantro lime sauce over the noodles in the pot. Toss gently to coat all noodles evenly with the sauce. Heat the mixture over low to medium heat for 1 to 2 minutes, stirring occasionally, until the sauce thickens slightly and the noodles are heated through.
- Serve: Transfer the creamy cilantro lime noodles to plates and enjoy immediately while warm.
Notes
- If you don’t have a high-speed blender like a Blendtec or Vitamix, soak the cashews in water for at least 6 hours or overnight to soften before blending.
- Alternatively, boil the cashews in water for 10 to 15 minutes until tender to make blending easier.
- Drain soaked or boiled cashews well before using for the best creamy texture.
- You may substitute tofu shirataki noodles with thin rice noodles for a different texture but similar flavor.
