Description

This hearty Vegan Irish Stew is a flavorful plant-based take on the classic Irish comfort food. Featuring Gardein beefless tips, fresh vegetables, and a rich Guinness stout broth, it’s perfect for a cozy meal. The stew is thickened with a cornstarch slurry to create a satisfying texture, making it ideal for chilly evenings or St. Patrick’s Day celebrations.

Ingredients

Scale

Main Ingredients

  • 1/4 cup olive oil
  • 1 large sweet onion, chopped
  • 1 bag Gardein beefless tips
  • 3 large garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 2 cups Guinness stout
  • 3 cups vegetable broth
  • 3 tablespoons tomato paste
  • 1 tablespoon vegan Worcestershire sauce
  • 4 carrots, peeled and cut into chunks
  • 4 yukon gold potatoes, peeled and cut into chunks

Thickening Agent

  • 1/4 cup cornstarch
  • 1/2 cup water

Instructions

  1. Heat Oil and Sauté Onions: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent and softened.
  2. Add Beefless Tips and Garlic: Add the Gardein beefless tips to the pot and sauté for 4 minutes until slightly browned but not fully cooked. Stir in the minced garlic and cook for an additional 1 minute to release its aroma.
  3. Season and Add Beer: Sprinkle in the dried rosemary, dried thyme, and ground black pepper. Stir constantly while cooking for 1 minute to toast the herbs. Pour in the Guinness stout and stir well to combine all flavors.
  4. Add Broth, Tomato Paste, and Worcestershire Sauce: Pour in the vegetable broth, tomato paste, and vegan Worcestershire sauce. Stir thoroughly to distribute the tomato paste and sauce evenly.
  5. Add Vegetables and Simmer: Add the peeled and chunked carrots and Yukon gold potatoes to the pot. Stir everything together and bring the stew to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 30 minutes, stirring occasionally to prevent sticking.
  6. Thicken the Stew: In a small bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the simmering stew while stirring continuously. Continue stirring until the stew thickens to your desired consistency. You may not need to use all of the slurry.
  7. Final Seasoning and Serving: Taste the stew and add salt if desired, depending on the saltiness of your broth. Serve the stew hot, optionally accompanied by crusty bread and garnished with chopped parsley for a fresh finish. Enjoy your hearty vegan Irish stew!

Notes

  • Substitutions for Gardein beefless tips include TVP chunks, mushrooms, lentils, or beans; use 2-3 cups as a replacement.
  • If Guinness stout is unavailable or unsuitable, substitute with more vegetable broth or alcohol-free beer, though the flavor will differ.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
  • For a thicker stew, gradually add more cornstarch slurry and stir well after each addition.
  • Serve with crusty bread to soak up the flavorful broth.
